Harvest in November

And aromatic grapes mature when the grapes are not roasted in the sun but simmered on a low heat. Our Riesling vines have not 80 to 100 days – like in the hot south - but up to 160 days time to let their subtle aromas mature and to store the slate's finesse. It seems as if it is exactly the enormous change in temperature between day and night towards the end of the maturing period which is decisive for the development of the aromas. This is the reason why we have harvested – already for years – the majority of our grapes only in November when the leaves have fallen after the first night frosts and when the grapes have reached their optimal aroma in the interplay of warm sunbeams, cool wind and cold nights.
