Only if the 4 oenologic basic kinds of taste, the maturity of the grape, the lightness of the mineralic acid, the power of the passionate alcohol and the aroma of the fine tanning substances bear a harmonic relation to each other, the subtle finesse of the terroir can be perceived in its complete individuality and complexity. Only if the wine also enchants our customers in its phase of minerality and maturity – and not only in its youthful phase of primary fruit – we talk about a terroir wine.

It is not about the construction of a sculpture but about "knocking off the shell to uncover the core" as Michelangelo once said.
